There was some discussion in my family recently about cooking with Diet Coke.  I’ve actually seen some recipes for barbequed ribs for the outdoor grill, but never thought the same thing would work with chicken breasts.  I’ve also found recipes that call for Diet Coke as a marinade.  Well, it was too funny not to try and how bad can it be?  Much to my amazement, our family’s crockpot diet coke chicken turned out great. Do you enjoy making the pies and cakes for your family celebrations? I always do and especially the birthday cakes. I’ve always had great fun baking birthday cakes because there are just so many creative ways to decorate them. The only part that used to drive me a bit crazy was getting the cake itself to turn out just right. I always seemed to have a problem getting the cake to release cleanly from the pan, without losing a chunk of the cake that I would have to then cover up with heavier icing or some sort of decoration to hide the mistake. Rare is the dish that I don’t think is improved by adding a little onion. Hot dogs, omelets, soups, casseroles, salads, green beans, sandwiches- all improved by adding some fresh onion. Onions sauteed in a small amount of butter or baked with a bit of chicken stock create a very nice flavor addition to many meals. However, keeping fresh onions n the kitchen has been a challenge. They lose precious flavor stored in the refrigerator and leaving them in the plastic bag from the grocery store keeps them from getting the air they need. What Is Dahl?

A Dahl (also spelled dal or dhal) is a staple of Indian cooking. It refers to a simple dish made from split lentils or peas or a combination of the two along with some Indian spices. My personal favorite is a split pea dahl. It is usually served on a bed of rice alongside a main dish such as a curry. Dahl is cooked daily in most Indian families and is eaten throughout the day with each meal. Dahl is cheap, healthy and full of protein and fiber, making it a great food too keep around and of course eat. Read the rest of this entry »
