I’ll Have Chicken And Diet Coke, Please


There was some discussion in my family recently about cooking with Diet Coke.  I’ve actually seen some recipes for barbequed ribs for the outdoor grill, but never thought the same thing would work with chicken breasts.  I’ve also found recipes that call for Diet Coke as a marinade.  Well, it was too funny not to try and how bad can it be?  Much to my amazement, our family’s crockpot diet coke chicken turned out great.

Going through my favorite crockpot recipesf or ideas helped a little, but there were no guidelines on what to use for spices.  I wanted to go the barbeque sauce route, but thought it would definitely be too heavy or rich with the cola.  Using ketchup seemed to make at least as much sense as using Diet Coke, so that’s what we did.  Turned out that the ketchup worked very well, mostly because of it’s tangy sweetness, but also the texture is very similar to a light barbeque sauce.  The whole effect was just a nice, tender barbequed chicken breast that’s also very figure friendly. Worked for us!
